Ingredients

Instructions
  1. Preheat oven to 325 degrees. Grease bundt pan with Wilton Cake Release
  2. In mixer bowl, cream together the butter and cream cheese until well blended. Add sugar, and beat until light and fluffy. Blend in the eggs one at a time, then stir in the coconut extract. Mix in flour and baking powder until just moistened, then stir in coconut. Spoon batter into the prepared pan
  3. Bake for 1 hour and 20 minutes in the preheated oven, until a knife inserted into the cake comes out clean. Allow the cake to cool in the pan for 10 minutes before inverting onto a cooling rack.

    I love coconut and will have to get the coconut oil. I am guessing that coconuts are actually nut. This sounds like an awesome recipe and I will have to make this one. Thanks for sharing.

    Whoa, I can’t believe I never thought about this before :) I eat a lot of coconut stuff and have zero clue if it’s a fruit or a nut- definitely not a seed.

    I remember there’s a song that kept playing years ago saying that the coconut is a giant nut and if you eat it you get very fat. The coconut is not a nut. I think it’s a fruit.
