Breakfast nachos anyone? Who said clean eating has to be boring? I was craving nachos and I experimented with ingredients last night during our snow storm in New York. I used corn tortillas for my nachos last night by baking them in the oven and they made the best chips. So, I decided to give it a try for our Breakfast Nachos. I try not to waste food, especially when you buy grass fed beef for $25.00 for 1lb. On my clean eating journey, I try to educate myself on the health benefit’s of each food, I put in my body. I was surprise to know that corn tortillas had a couple of health benefit’s such as fiber, phosphorus, copper and manganese.
Fiber is very important for your digestive tract, for each 2 oz of corn tortillas it provides 6.3 grams of dietary fiber. Women age 50 and younger needs 25 grams of dietary fiber daily and women 51 and older needs 21 grams of dietary fiber daily. A fiber rich diet also fights diverticular diseases and hemorrhoids too.
Phosphorus helps support red blood cell function and acts as a chemical buffer to control the acidity of your blood. The table below shows you how much phosphorus you need daily to help filter out waste in the kidneys, manage how your body stores and use energy, reduce muscle pain after exercising.
- adults (19 years and older): 700 mg
- children (9 to 18 years): 1,250 mg
- children (4 to 8 years): 500 mg
- children (1 to 3 years): 460 mg
- infants (7 to 12 months): 275 mg
- infants (0 to 6 months): 100 mg
